  1. Prepare the decaf espresso or strong decaf american coffee and put 2 tsp sugar and wait until is cold or room temperature. Put mascarpone cheese out refrigerator 30 minutes before start and the eggs too.
  2. Split the eggs in two bowls, one with eggs white and one with eggs yolk. Make sure they don’t mix.
  3. Mix the white and half sugar add one spoon por time, use an electric mixer.
  4. Mix the yolk too with the left sugar with the mixer untill become a cream. Add the mascarpone cheese and mix with a spoon.
  5. Add the white part and continue to mix soft with an spoon or hand whisk
  6. Mix untill become like a thick cream. If you reverce the bowl the cream have not move.
  7. When the cream looks soft and homogeneous add the almond flavour
  8. Add vanilla flavor to the coffee . Prepare a plate with same coffee
  9. Take one lady finger por time and leave stay 3 second every side. Be sure is not to much time and soft
  10. Put in a pan cake of 8 inches. Make different lines horizontal and vertical cut a little if are to much long in the end.
  11. Put one layer of lady finger and one of cream untill you finish both. At the top finish with the cream.
  12. Leave in the refrigerator for 30 minutes and after you can put on the top the cacoa powder
  13. Put the almond and push little with a spoon to be sure the stay on the cream.
  14. The best result is to prepare a day before, it is good to frozen and put in the refrigerator the night before you need.
