Cannelloni Crepes with red meat sauce and cheese

Ingredients

Ground meat Sauce
Beciamella cream 2 cup ( white sauce)
Creaps filling and top
Instructions
  1. Make the crepes
  2. Use a whisk to mix the eggs in a bowl. Add the flour and milk and continue to mix add the butter and salt too . The mix have to look homogeneous without lumps. For the best result put in the refrigerator for 30 minutes to give time to rest.
  3. Use non stick medium size pan to cook the creap. Put little of butter to be sure that daesn’t stick. Put 3 tablespoon of dough and try to make a form circle, cook 30 second for each side or until is gold color. Use a flat spatula ti turn the crepe.
  4. Keep cooking until the dough is finished, placing the Crêpes on top of each other on the plate
  5. Make Ragu’ meat sauce
  6. Put 4 tablespoons of extra virgin olive oil in a pan and cook with the veggies onion, carrot and celery. Add the meat and let it cook for a few minutes, add salt and let it evaporate with an half glass of white wine and a large glass of water , add tomato paste too. Turn same times, cook for about an hour. ( You can cook more too but you need add more water).
  7. Make beciamella
  8. In a small pot , mix the milk, flour, butter and salt. Cook for 5 minutes or until the mixture becomes a cream, always turn and make sure that there are no lumps. Add a pinch of nutmeg to off heat.
  9. Use a rectangular pan to prepare Cannelloni creps. add same beciamella in the base of the pot.
  10. Place a couple of tablespoons of ragu in the center of each creap, a couple of tablespoons of beciamella and pieces of mozzarella. Wrap the creap making sure that the sauce does not come out. Put a little ragu and a little beciamella on each creap and continue to arrange them in a row.
  11. Cover with parmesan flakes.
  12. Bake in a preheated oven 370 F for 25 minutes and serve.
