This is a Vegetarian and Vegan version of frittata. To make more light l fried only the Vegetables and l mixed with eggs and l cooked in the oven

olive oil

Instructions
Cut in small pieces the potetos, zucchini and onions
Fried in a pan with 2 tsp olive oil for 10 minutes
After mix hthe vegetables with eggs already beaten.
Put one tsp oil in the bottom of a baking pan and put all mix eggs and vegetables inside.
Cook for 20 minutes at 370 F°
Cut and serve in a plate or in a “Panino bread”
