Strawberry and whipped cream cake is a family Italian recipe. It is a fresh and delicious cake. My mom has tradition to make during spring time when you can start to find in the local farm market the best Strawberris. They looks so read perfect and juice, their parfume make everyone eager to eat.

When I was child I was always exating to wach her to make. The whipped cream is always a good frosty for nice decor and the strawberries have a natural form and color that remember many little hearts. She was usually making “Strawberry and whipped cream cake” around Mather’s day so I did the same this year and my son watched me with the same curious eyes I was doing with her.

This dessert required little more time than usually you need to make a cake because here you have to prepare first the basic cake called ” Sponge Cake”. This is the basic Italian cake for many type of chocolate or fruit dessert . It is very simple and soft, the best cooker know to make without baking soda only 3 ingredients flour, eggs and sugar.

Sponge cake recipe
  1. Prepare all your ingredients. It is very important that the eggs are in room temperature. Add the baking soda to the flour and mix.
  2. Separate eggs white in a bowl
  3. Use a electric mixer with hight speed for 5 minutes until is a soft light cream and continue for others 5 minutes adding the sugar one spoon at time
  4. Add a yolk one at the time with slower speed
  5. Now start to use the manual whisk and turn slowly adding the flour one spoon at time. It is important that the cream remain soft.
  6. Put all cake cream in a cake pan of 10 inch. Put at bottom butter or paper. Cook for 40 minutes at 370F. Not open the oven in this time. Try with a "spaghetto pasta" ot toothpick if the cake look soft and dry it is ready
  7. Leave for 3 hour cover with a Cloth. You can make the day before too, in this case save with around a blastic paper when is cold.
Filling cake
  1. Prepare the strawberries juice. Mix 4 cup water with sugar add cutted strawberries and lemon flavour( optional you can add limoncello or any cake liquor). Put in the refrigerator for 3 or more hours. Prepare the yellow lemon cream Put the milk, eggs, sugar and flour and lemon flavor. Mix the 1 1/2 cup milk, the 1/4 cup flour, 1/3 cup sugar and 2 the lemon flavor. In a small pat cook for 8 minutes or until became a cream, keep turning often. Wait to become room temperature before to use. Prepare the whipped cream be sure look heavy type
  2. Strat to prepare the sponge cake. Cut in two part just in the middle, use a big knife
  3. Take of same soft part from inside to make more space for the filing
  4. Start to with a spoon to put all around of base of cake the strawberries juice and the catted strawberries that you prepared. Leave half of the juice to put around with the spoon on the other half of sponge cake
  5. After add the lemon cream
  6. Add the whipped cream
  7. slowly put the other half of the cake on the top
Topping decor
  1. Cover all cake around with the whipped cream, use a spatula to make flat and equal. Use a fork to make same line décor.
  2. add the strawberries décor. Start one big in the middle and different slices around like a flower.
  3. keep in the refrigerator for two hour before eat or save for three days.
