Cannelloni Crepes with red meat sauce and cheese is one of my top list meals for guests. They are a traditional Italian recipe that most the time make happy everyone, kids and adults. These crepes are soft and very tasty, you can prepare a day in advance and just cook for 25 minutes before to eat your dinner.
I love eat crepes sweet or salty, they are soft and light. There are many recipes for their filling the most common for Cannelloni style are with spinach and ricotta cheese or meat sauce and mozzarella.
This is a family recipe, it is my brother favorite meal, and my mom is usually making for his birthday. Now l started to cook often too, since my husband discovery his delicious tasty, he asks to make for special dinner.
The recipe apparently looks difficult, but it isn’t if you follow step by step my recipe. There are three basic recipes that l combines together in this meal: basic crepes, red meat sauce ‘) and beciamella sauce (white sauce).

Ingredients
Creaps
- 1 cup Milk
- 2 Eggs
- 1/4. tsp Salt
- Butter for pan
Ground meat Sauce
- 1 cup All purpose flour
- 1/2 Carrot
- 1/2 Onion
- 7 oz Tomato paste
- 1/2 l ground meat beef
- 1 Celary
Beciamella cream 2 cup ( white sauce)
- 4 tbsp Butter
- 6 tbsp All purpose flour
- 2 1/2 cups Milk heated
- 1 tsp Salt

- 1 Cup grated fresh parmesan cheese
- 1 Cup Fresh mizzarella

Instructions
- Make the crepes
- Use a whisk to mix the eggs in a bowl. Add the flour and milk and continue to mix add the butter and salt too . The mix have to look homogeneous without lumps. For the best result put in the refrigerator for 30 minutes to give time to rest.
- Use non stick medium size pan to cook the creap. Put little of butter to be sure that daesn't stick. Put 3 tablespoon of dough and try to make a form circle, cook 30 second for each side or until is gold color. Use a flat spatula ti turn the crepe.
- Keep cooking until the dough is finished, placing the Crêpes on top of each other on the plate
- Make Ragu' meat sauce
- Put 4 tablespoons of extra virgin olive oil in a pan and cook with the veggies onion, carrot and celery. Add the meat and let it cook for a few minutes, add salt and let it evaporate with an half glass of white wine and a large glass of water , add tomato paste too. Turn same times, cook for about an hour. ( You can cook more too but you need add more water).
- Make beciamella
- In a small pot , mix the milk, flour, butter and salt. Cook for 5 minutes or until the mixture becomes a cream, always turn and make sure that there are no lumps. Add a pinch of nutmeg to off heat.
- Use a rectangular pan to prepare Cannelloni creps. add same beciamella in the base of the pot.
- Place a couple of tablespoons of ragu in the center of each creap, a couple of tablespoons of beciamella and pieces of mozzarella. Wrap the creap making sure that the sauce does not come out. Put a little ragu and a little beciamella on each creap and continue to arrange them in a row.
- Cover with parmesan flakes.
- Bake in a preheated oven 370 F for 25 minutes and serve.
