The word frittata come from verb “friggere”  that means “fried”. This was use to indicate  cooking beaten eggs , make with different flavor, cheese meat or veggies and fried in a flat pan. This is one the most fast and easy plate in Italy , it dosn’t required particular ingredients so you can decide to make for last minute dinner. My mom was making also for one day trip for all family, when you are around and hungry , there isn’t best meal than a good sandwich home made . You can prepare the day before keep in the refrigerator and bring in a “Panino bread” with you.

This is a Vegetarian and Vegan version of frittata. To make more light l fried only the Vegetables and l mixed with eggs and l cooked in the oven

Instructions
  1. Cut in small pieces the potetos, zucchini and onions
  2. Fried in a pan with 2 tsp olive oil for 10 minutes
  3. After mix hthe vegetables with eggs already beaten.
  4. Put one tsp oil in the bottom of a baking pan and put all mix eggs and vegetables inside.
  5. Cook for 20 minutes at 370 F°
  6. Cut and serve in a plate or in a "Panino bread"
