Italian zucchini marinated recipe is a famous side dish from the south and it is colled Zucchine alla Scapece.

This is a dish from Naples and it is very easy to make. You can prepare like side dish or appetizers on the top of crackers. The word Scapace comes from Latin “escabeche” and the origin is in the Roman period that does mean dip or drench something . This is used to indicate a marinating process with vinegar and mint. It helps vegetables or fish to give a great smell and flavor.

My mom is usually making when it is very sunny day because she wants to make zucchini dry at the sun. I used this technique too because it helps to take away the water of the zucchini.

  1. wash and cut the zucchini in rounds and put on a lurge try
    cut zucchini in round
  2. put at sun for on hour and turn the zucchini at other side for an other hour. ( if you don't want put out to the sun you need to put 1 tsp salt on and wait that water of zucchini came out. After 30 minutes wash the zucchini and dry)

  3. fry the zucchini and wait they become gold before to turn side

  4. put in a plate wih paper towel after fried so all extra oil can be absorbed. Trasfer the zucchine in a save contener and after add italian erbs, vinegar, sliced garlic and mint leaves. Wait an hour before to serve.

  5. I prepared for appetizer, one crackers, one zucchini , one piece of provolone cheese. it is possible to preserve the marinated zucchini in a close container for 4 days
