Parmesan biscuits recipe it is one of my favorite. It is an easy recipe because you need only three Ingredients. Parmesan, butter and salt.

Since l live in the USA my family is usually sending me a big package for the most important occasions and holidays. Birthday, Christmas, Easter any holiday is good to send typically Italian food. Guess what is one of my preferet thing that l like to receive?! Parmesan cheese, of course! Everytime l have good quantity of this cheese, l like to make Parmesan biscuits recipe because they are delicious and my kids love them. When you start to eat one you can’t stop. The best is to eat for snack with an aperitivo drink on the side.

Now you are thinking, why this cheese is so good? The Italian Parmesan cheese colled “Parmigiano Reggiano DOP” is special. It is a hard, granular cheese that is cooked but not pressed. The name reflects the particular area were came from, which comprise the Provinces of Parma, Reggio Emilia, Bologna, Modena, and Mantova, Italy. The Italian law, says that the original name can give only to the cheese produced in these provinces and they cheese can be labelled on top “Parmigiano-Reggiano”.

Infact the only way to recognize if it is the original Italian cheese is look on top of piece, you can read his name: “Parmigiano Reggiano”. It is the Italian adjective for Parma and Reggiano two Town where they produced the cheese.

European law classifies the name, as well as the translation “Parmesan”, as a protected designation of origin.  In the US they call name Parmesan the imitation of Parmigiano-Reggiano, that is “Italian hard cheese”.

The Parmigiano is 36 months sesoned so the quality is better. The most common Parmesan that you find in the market is seasoned only 10 months.

Parmesan Biscuits Recipe

Ingredients

  • 1 Cup Parmisan
  • 1 Cup Flour
  • 1/3 Cup Butter 3 oz
  • 2 Tsp olive oil

Instructions

  • Use a mixer for the Parmisan cheese, it have to become grated
  • Make warm the butter untill become liquid
  • Mix all ingredients together, with fork and hands
  • Cover the dough with plastic and put in the refrigerator for 30 minutes
  • Prapare a cookies pan. Make small balls of the dough and put with distance on the pan.
  • Press the balls with fork to make the decor line.
  • Cook 370 for 10 minutes. Eat in 4/5 days
