Which are the main ingredients of this Risotto?
Risotto with Porcini Mushrooms is a one of best way to eat “Porcini” but what are them? They are a kind of Mushrooms very common in Italy and French. you can find fresh or dried . They grow naturally in pine forest, they are usually located at base of trees. Autumn is the main season during this time the are collected and dried to use all year.
Arborio rice main ingredient. There are many kinds of rice and different way to use. Arborio rice is an Italian short-grain rice. The name Arborio, came from the town in north Italy, Piedmont where grow. This Mushroom grown in Arkansas, California and Missouri in the Unite State too.
Why this rice is special for Risotto?
When do you cook this rice, it looks firm but if you add broth, it become creamier and chewy compared other kinds. It has a starchy test, and it is good mixed with other ingredients.
My memories about Porcini
The area were I grow up, Irpinia, in the south of Italy, Porcini are really common. The people go in the fall for long walk in the mountains and they look for Porcini Mushrooms under tree. Their color and nice small make easy to recognize them so you are sure don’t take a wrong one. The people most the time collect big basket and they frozen or dry for the year. One of way we were eating mushrooms at my home was in the Risotto.
Risotto with Porcini Mushrooms is really tasty. In the recipe I m proposing here I used dry Porcini, they are good to make the broth and give a delicious tasty and great smell. It is not easy to find this kind of mushroom in the market but yesterday I was surprise to find them in one moment the nice memory of good risotto that my mom was always making come to my mind. I decided to make it was like my memory recognize so I could not miss to propose you.
