Couscous with vegetables and chickpeas is a very good vegetarian and vegan recipe . Today l did’t had time to prepare the dinner in advance, my kids made my day busy so it was almost time for the dinner my husband was already at home and 3 hungry boys were wating to eat food in short time a made a delicous healthy meal. They enjoyed so much that l wished l made more. This become definitely one of my favorite recipes to make in 30 minutes and also good the next day.

  1. Cut your veggies, make small size cubes or slices for sweet pepper, little bigger cubes or slices of zucchini and onions.

  2. Cook the couscous like your package suggest, different quality make between 5-15 minutes. I used a brown quality and big size.
    Whole wheat cous cous
  3. Iin the same tiem cook in a large pan add the olive oil and the veggies, fried for 5 minutes add the chickpeas without the water and cook for other 10 minutes
    Vegetable mix with chickpeas
  4. Add couscous to the veggies mix for 5 minutes and eat. You can eat hot or cold the day after as you like
